Introduction to basic principles of human nutrition and metabolism. Chemical structures, physical characteristics, and metabolism of protein, carbohydrate, lipids, minerals, and vitamins. Relationship between diets and metabolic diseases. Effects of deficiency or excess on health. Prerequisites: general biology and chemistry; organic chemistry concurrent.

NUTRITN 130 & CHEM 112,122,102 Prerequisite: NUTRITN 130 and either Chemistry 112 or 122, Previous or concurrent enrollment in CHEM 250 or CHEM 261 is required, Student enrolled in CHEM 250 without completing CHEM 112 can be enrolled in NUTR 230 with instructor or advisor permission
