"Let Food be Thy Medicine," one of the most widely quoted phrases of Hippocrates, has taken on new meaning in our contemporary society as companies flood the marketplace with nutraceuticals and functional foods to capitalize on their health promoting claims. In this course we will examine the science behind the claims through the lens of food science, epigenetics, chemoprevention and pharmacognosy. To explore the role of food as medicine some of the topics will include: food chemistry, nanotechnology, dietary bioactive food components, nutraceuticals, functional foods, herbs, dietary/disease patterns, local health organization initiatives and food labeling policy
Open to students in the Natural Sciences Exploratory Track.
