This course introduces students to the field of clinical nutrition and the role of nutrition therapy in the treatment of disease. Students consider the biochemical and physiological aberrations occurring in diseases of the cardiovascular system, respiratory system, digestive system, and renal system, and investigate the management of disease through dietary modification. Students apply the Nutrition Care Process to conduct nutrition assessments, identify nutrition diagnoses, propose nutrition interventions, and monitor and assess patient progress toward nutrition goals. This course, intended for students interested in pursuing a career in the health sciences, demonstrates the critical role of nutrition in the clinical setting. Prerequisite: BIO 132 or ESS 261.
