Underrepresented minorities only make up 17% and 7% of bachelor of science (B.S.) and Doctor of Philosophy (Ph.D) degrees in STEM, respectively. Thus, the overall goal of this course is to develop and implement a food science program that is customized to underrepresented school underrepresented minorities (8th grade +) to increase their knowledge and interest in STEM-related fields within sustainable food systems and food science. To do this, we need students to help develop an interactive, hands-on learning programs to inspire learning and career pathways within STEM! For girls and underrepresented minorities in rural communities, we aim to create an outreach program about food quality and sustainability principles, and their applications to extend shelf-life, reduce food waste, and develop novel products from local produce will be a valuable tool to strengthen STEM.
