From the advent of agriculture to modern day, what have humans been eating and why? Grocery stores and restaurants provide us with an abundance of options, but should we be eating what they provide? In this class, we will go over how the human diet has changed over the past 20,000 years and how this has impacted science, society, and technology. We will focus on historical and modern topics related to the intersection of food systems, culture, food policy, and social justice. To accomplish learning goals, students will engage in a variety of interactive in-class and creative take-home assignments.
