This course provides the molecular basis on how dietary factors regulate the pathogenic progression of chronic diseases, including type 2 diabetes, atherosclerosis, and other nutrition-associated metabolic disorders. Additionally, this course will discuss the recent advances and scientific controversies in nutritional sciences. This course will cover four areas: Nutrient signaling on the development of obesity and type 2 diabetes, Cholesterol and lipoprotein signaling on the risk of cardiovascular diseases, Dietary factors that regulate inflammation, and other food-borne signaling and metabolism.
