First-year (R1ST) Title: Reimagining Meat in a Reimagined World
Description: How do we feed a growing population in the face of climate change and public health? Will we see lab-grown meat in the markets anytime soon? Are you curious to learn about a frontier in food science and engineering, or passionate about animal rights, human health, and sustainable agriculture?
Join us as we take a deep dive into the science behind alternative proteins used to produce plant-based, fermentation-derived, and cultivated meat and the environmental and economic drivers behind these market sectors. Through this course, you will hear from researchers developing novel alternative proteins, practice designing an innovative product, and navigate resources to be successful at UMass.
