First-year (R1ST) Title: Unveiling the Science Behind What You Eat: Exploring the Mysteries of Food
With so many delicious options in the dining hall, it's not always easy to make the nutritional choices that best support your health and well-being. Join this class for an immersive exploration of the scientific principles underlying your dietary choices. Throughout this course, you will embark on a journey to comprehend the composition of various food products and their effects on your body. Engaging activities will guide your exploration of topics such as how miracle berries alter taste perception, the benefits and drawbacks of food preservatives, and the connection between gut microbiomes and diet. By doing so, you will unravel the mysteries of food science and its significance for your health. Like other First Year Seminars, we will also cover skills to help you succeed in your first semester at UMass Amherst.
