First-year (R1ST) Course Title: Why are There Chemicals in My Food? An Exploration of the Chemical Safety of Foods
What is a chemical contaminant? How and why are they in the foods we eat? How do we determine if a food is safe to consume? In this course, we will explore the fundamentals of food chemical safety, including why chemicals are present in foods, how they enter the food supply, their potential risks and benefits, and the technology used to measure them. Through real-world case studies, you will examine issues such as food fraud, contamination, and regulatory actions that influence the foods we encounter every day while also providing hands-on exposure to technologies used in food safety analysis. This First-Year Seminar course will emphasize critical thinking, evidence-based decision making, and effective communication about scientific issues that affect consumers and public health.
