First-year (R1ST) Course Title: Food Through the Lens of Culture, Identity, and Family
You probably think about food multiple times per day, but do you ever think about the ?why? behind the choices you make? We not only choose food based on nutritional value, taste, and cost, but also based on our individual genetics, upbringing, and prior exposures. Throughout the semester, you will learn the key components of food sensory science and food product development, and will take on the role of a sensory scientist, tackling important questions that explore the ?why? behind your food choices. Together, we will delve into the world of food science by sharing personal stories, engaging in thought-provoking conversations, and working to understand our individual and collective choices regarding food. Our food choices will be used as a framework to foster connection, conversation, and meaningful experiences on campus. This course will also cover an introduction to UMass Amherst and resources available for students.
