S- Seminar on Literacy
This seminar explores three sociocultural perspectives on literacy: literacy as social practice, multiliteracies, and critical literacy. Students will connect contemporary issues in literacy and education with personal research and scholarly interests.
FYS - "Is Food Thy Medicine?"
"Let Food be Thy Medicine," one of the most widely quoted phrases of Hippocrates, has taken on new meaning in our contemporary society as companies flood the marketplace with nutraceuticals and functional foods to capitalize on their health promoting claims. In this course we will examine the science behind the claims through the lens of food science, epigenetics, chemoprevention and pharmacognosy.
