This course is designed to develop students' ability to write and communicate clearly, concisely and accurately about nutrition and health topics, including scientific study findings, for a variety of audiences. Assignments include but are not limited to: literature review, personal statement, feature article.
Nutritional needs and effects of intakes during pregnancy and lactation, infancy, preschool period, middle childhood, adolescence, adulthood and aging. Relation of nutrition to physical and physiological growth, development, maturation, and decline.
Introduction to basic principles of human nutrition and metabolism. Chemical structures, physical characteristics, and metabolism of protein, carbohydrate, lipids, minerals, and vitamins. Relationship between diets and metabolic diseases. Effects of deficiency or excess on health. Prerequisites: general biology and chemistry; organic chemistry concurrent.
History of nutrition; career options and decision-making alternatives; professional societies and their roles; introduction to the faculty, curriculum, and facilities of the department.
