Come, join me as we explore how chocolate plays a role in our everyday lives. Want to know how a tiny bean turns into a giant bar of chocolate? In this seminar, we will talk about your favorite chocolate and memories associated with it. We will follow the journey of the cocoa bean from forests across the world to a factory in the United States, and discuss practices to be followed in the procurement and sustainable consumption of cocoa. Finally we will learn how to make chocolate!

FYS- The Microbiology of Food

Do you like kombucha, yogurt, and cheese? Have you heard of any food-borne disease outbreaks? Do you know how dietary fiber gets digested in the human body? Microbes are an inseparable part in food production, safety, and metabolism! In this seminar we will enter the microcosm and explore food-borne pathogens, including associated diseases and outbreaks, and how to prevent them. We will also investigate the applications of bacteria in food production throughout the history and health benefits of fermented food. Gut health is closely associated with the bacteria in the human large intestine.

How does identity shape the questions we ask in science and research? In this course we will learn from a variety of academic disciplines (and each other) about the various ways our multiple identities?race, class, spirituality, gender, sexuality, etc.?influence our experiences and opportunities in our academic work. Together we will engage with practices and tools that researchers from a variety of disciplines, spanning the arts to the sciences, use to think about how we as individuals examine and relate to the world around us.
