Public Health Sciences Capston

The culminating experience of the Public Health Sciences Major, this course is designed for students to synthesize and integrate their learning from previous coursework, internship, and extra-curricular activities in the discipline. Course leads to a project, presentation, initiative, or research paper that is present at the Statewide Research Conference. Class also helps develop skills in teamwork, communication and leadership. Satisfies the Integrative Experience requirement for BS-PubHlth majors.

Chronic Disease Epidemiology

This is a seminar/discussion-based course where readings from a range of areas in chronic disease epidemiology will be discussed. Topics will focus on areas of recent interest (e.g., cell phones and brain cancer) and areas where significant differences of opinion related to scientific findings have existed.

ST-Nutrition Educ Practice

This course exposes the learner to theoretical concepts, practical skills and approaches that are integral to nutrition education. Students will be introduced to learning and communication styles, methods of conducting needs assessments in diverse environments and use of a framework for planning, designing, delivering and evaluating a nutrition education project. Students will conduct regular nutrition education projects in the field outside of class time.

ST-Culture, Nutrition & Health

How culture and ethnicity affect dietary practices and health in the U.S. Influence of food security, acculturation, and politics on food availability, food practices, and health outcomes. Health and health disparities in different cultural/ethnic groups, including overview of epigenetics. Emphasis on cross-cultural communication to address health and nutrition concerns.
