Skeletal Muscle Biology

This course will provide students with knowledge of multiple aspects of skeletal muscle biology. The material will include information about the basics of muscle contraction, muscle activation and bioenergetics. Laboratory-based opportunities will be used for students to try/experience various techniques commonly used to study muscle function from the molecular to whole muscle levels.

Career Developmnt from Day One

Career Development from Day One will help students to cultivate their career development skills from the beginning of their college careers. Students will learn how to utilize their unique standing as a student to network with professionals in their fields of study, create content related to their field of study to build a reputation as an innovative thinker, and to how to seek out unorthodox career development opportunities.

Marx, Du Bois & Demcracy in US

We usually think of challenges to democracy in the U.S. from the political right. However, it is also facing skepticism from the left, particularly among college students, who are asking: How can a system characterized by deep racial and class inequalities from its very origins be ?democratic?? We?ll examine the key ideas of two great scholars and activists, Karl Marx and W.E.B. Du Bois, regarding democracy in Europe, the U.S. and elsewhere.

Kicking the Fossil-Fuel Habit

We will explore the energy transition at the home and local level, including both policy and technical advances that help us all move away from fossil fuels and towards clean, electric energy. To meet state and national climate goals, every home in the country must transition to clean electric heat and appliances over the next couple of decades.

Listening to Music

This course will teach you how to listen to music in a deep and meaningful way. Deep listening involves actively creating space in your life to access your thoughts, feelings and allow opportunity for absorption of material. Through systematic study students will deepen their ability to listen to and appreciate music.

Learnng Philippine & Filipino

Featuring both documentary and feature films, this course takes the students through the history of the Philippines and the Filipino diaspora. Through the videos, students will learn about the history of Spanish, American, and Japanese colonization of the Philippines, the history of migration of Filipinos to the US, as well as contemporary social, economic, and political issues facing the Philippines and Filipinos in the diaspora (including those in the US).

The Literature of Food

Food suffuses everything we do. It nourishes, propels, inspires, comforts, vexes, and sometimes even destroys us. Naturally, people have been writing about food for as long as they have been writing. In this class, we will critically analyze a broad scope of writing on food, from Ancient Rome to contemporary New York. We will discuss such concepts as community, identity, nostalgia, ethics, commerce, nutrition, foraging, and more.

This course enacts a way of being thoughtful, involved, and responsible in making your way through higher education. It presents college in three dimensions ? space, time, and purpose ?

The primary goals of this course are to introduce First Year Students to the ideas behind some of the neuroscience and psychological ideas surrounding why we think the things we think. I hope to broaden your perspective regarding how to interpret our thoughts. Just because we think something doesn?t make it true. There are evolutionary reasons for some thoughts we have and also there are life experiences that shape our thoughts, and in both cases, it is possible to understand WHY we think the way we do and the CHANGE the way that we think.

Time Management and Time Liter

A seminar on time management from practical and theoretical perspectives. This course involves identifying and improving strategies and skills related to time management, including developing and refining an effective system for the semester. Students will focus on how to manage their time for college academics and extracurricular activities, and how to develop overall time literacy in order to establish productive routines based on what works for you.
